Firmly attached to his terroir, its produce and the men and women who sustainably farm it, day in day out, the Executive Chef has created a seasonal fine dining experience to which he has added a contemporary twist.
The produce includes fish and shellfish from the Bay of the Somme, game from the forests and plains of Picardy and fruit and vegetables from market gardeners in the Audomarois marshes…
Season after season, the Chef carefully and rigorously selects perfectly ripe, fresh, local produce for its intense quality and flavour.
And so the Menu comes into being, ever evolving with the passing seasons.

Our favourite: the famous Flemish carbonade reworked by the Chef. After 48 hours of cooking, the succulent pieces of beef are served in a cast iron casserole dish simmered in mustard, regional beer and star anise.
